01 May Tostadas
Goodbye April and hello there May!
In a couple days it will be Cinco de Mayo and that’s the perfect excuse to eat some delicious mexican food! I’ve grown up eating these tostadas as long as I can remember and now my kids and husband loves them too! We also call them “Mexican Pizzas” because of all the layers just like pizza! They’re fast and easy to make and you can grab everything you need with a quick trip to the grocery store! Gather the ingredients this weekend so when Tuesday rolls around, you can throw these together and celebrate the holiday!
The ingredients needed are: 1 package corn tostadas (pictured below), 1 can refried beans, grated cheese, and 1/2 lb sausage cooked and crumbed. (I’ve never tried turkey sausage, but I have a feeling it would work great too!)
Some optional toppings are: lettuce, tomato, ketchup, sour cream, avocado, and salsa. |remember our favorite salsa that we lather on everything? It’s almost that time again to plant our salsa garden!|
Preheat your oven to 350 degrees. To get started you’ll want to cook and crumble your sausage in a pan until it is brown. Next lay your tostada corn chips on a cookie sheet that has been lined with foil. You will need 2 cookie sheets to make a total of 10 tostadas. This batch will only use 1/2 lb of sausage and 1/2 bag of the tostada chips so I usually make them again 2 weeks later with the leftover ingredients!
Now it’s time to layer! Smooth over a layer of refried beans, followed by grated cheese and topped with your crumbed sausage on each tostada. Put your cookie sheet in the oven and bake for about 10 minutes until the cheese is melted.
Once they’re out of the oven, it’s time to add all the good stuff. My kids only like a little lettuce and lots of ketchup! On the other hand, I think the more toppings the better! 🙂 We just pick ours up and eat it with our hands! For my 2 year old, I usually use a pizza cutter to cut hers into a couple smaller pieces! Most of us eat 2 each and they’re actually really filling and probably one of my favorite things! They’d be great with a side of rice as well!
If you really want to set the mood, turn on your pandora music on your computer and create the station “cinco de mayo” for some fun music. I think it might start a little dance party in the kitchen! You can’t help yourself with that beat! 😛 Also stop by your favorite restaurant and pick up some chips and salsa! I think that sounds like a fun party to me whether it’s with your family or friends!
