15 May Raspberry Pretzel Jello

You probably know by now what a big part jello plays in my family! My family has been making and eating this jello for as long as I can remember!!! It regularly appears at most of our family parties and holidays and we practically lick the dish clean! I call it a jello so that you can justify also serving dessert, although it really should be called a dessert! 🙂 It could also be called ‘Raspberry Cheesecake’ because it has a perfectly salty crust, with a fluffy cream cheese layer, topped with a raspberry topping! It is probably one of my, if not my VERY FAVORITE, treat! I also just made it for Mother’s Day and Meghan’s daughter’s baptism! It’s a great thing to bring to any summer bbq or potluck!

Layer 1:
1 1/2 C crushed pretzels
1 C melted butter
1/2 C sugar

Preheat your oven to 350 degrees. I then place my butter in my 9×13 baking dish and put it in the oven while it is preheating. Then my butter will start to melt which is just what I need!

While the butter is melting, I then crush my pretzels! Once I notice that the butter is pretty much melted, I pull it out and pour my crushed pretzels and sugar into the dish. I’m pretty much just trying to eliminate dirtying another bowl! 😉 I mix it together and press it into the bottom of the dish. Bake for 6 minutes.

Layer 2:
1/2 C sugar
1 (8 oz) cream cheese softened
1 small container cool whip

After your crust has cooled, you will then add your fluffy layer. Mix together your softened cream cheese and sugar. Then fold in the cool whip and layer that next!

Layer 3:
1 (6 oz) pkg raspberry jello
2 C boiling water
1 pkg frozen raspberries or mixed berries

Mix your jello into your boiling water until it is dissolved. Add your raspberries or mixed berries (typically I just do frozen raspberries, but this time I happened to have a bag of mixed berries and thought it would be fun to try!) and let it sit out until it has a little jiggle to it! Then you will spoon this over the top.

Refrigerate for 4-6 hours!
