06 May Mother’s Day Morning: Simple Crepe Recipe

Our mornings pretty much all look the same. As soon as the children get up, I find myself rattling off the same breakfast options “Who would like cereal, oatmeal, eggs or toast?” Which then is followed by the most unenthusiastic stares. Sometimes I try to make it interesting and throw in a boiled egg as an option too. Yeah, I think I feel their pain… its been a long school year and all the mornings look the same.

Here is a simple crepe recipe for you to try. It’s so easy and the toppings are endless. Some more good news about these crepes is you can also freeze them for really quick mornings. Top them with fruit, lemon juice and sugar, and granola or nuts for some crunch.

I can also see how a crepe bar will be well received on Mother’s Day morning. Just slip this recipe to the hubby and kids!

Crepe Recipe:

1 cup all-purpose flour (spooned and leveled)
1 tablespoon sugar
1/4 teaspoon coarse salt
1 1/2 cups whole milk
4 large eggs
3 tablespoons unsalted butter, melted

In a blender, combine flour, sugar, salt, milk, eggs, and butter.

Puree until mixture is smooth and bubbles form on top, about 30 seconds. Let batter sit at least 15 minutes at room temperature (or refrigerate in an airtight container, up to 1 day; whisk before using).

Heat a 12-inch nonstick skillet over medium. Lightly coat with butter. Add 1/3 cup batter and swirl to completely cover bottom of skillet. Cook until underside of crepe is golden brown, 2 to 3 minutes.

Loosen edge of crepe with a rubber spatula, then with your fingertips, quickly flip. Cook 1 minute more. Slide crepe out of skillet and repeat with remaining batter. (Coat pan with butter as needed.)


Pretty up the table with a few flowers in a vase, stem glasses and fancy linens. This is my Mother’s day Breakfast morning from last year. My children helped their dad in the kitchen and made me the most gorgeous crepe breakfast. We love tons of mixed berries and fresh cream at our house. The children really love their crepes topped with chocolate sprinkles. This, to me, sounds like the perfect Mother’s Day breakfast and your Mother’s Day will be off to a great start!
